Healthy caesar salad dressing? Oh yes!

I love caesar salad. I love the crispy romaine lettuce and the salty garlicy dressing. It is such a great summer time food with the possibly of it becoming a meal so easily. I love a barbecued chicken breast sliced on my caesar salad or some oven roasted crispy chickpeas but my favourite protein to have with caesar salad is white fish. Cod, halibut, whatever you fancy. I love the meaty white fish with that lovely dressing, throw on some homemade chunky croutons and I am happy. I often toss on a handful of halved cherry tomatoes as I love the sweet juiciness of them contrasting with the tang of the dressing. Or lightly steam some green beans and run them under cold water before tossing them in. Yum!


Add to the utter deliciousness, and the cool meal factor (when you are in the middle of a UK heat wave, yes, it happens) the fact that it takes a jiffy to prepare. Win, win, win.


So, what is the problem? "Eat your caesar salad then, April," I hear you saying. The problem is that caesar salad dressing is calorific, high in saturated fats and has enough sodium for a small army. Until now…


I am going to share with you my healthy(er) caesar salad recipe that is also dairy free. Even better, it doesn’t taste healthier so you can feel great about treating your body better and indulge in the delicious flavours at the same time.


This caesar salad dressing recipe has less calories, less saturated fat, and less sodium than store bought brands and even has a few grams of protein per serving so it can count toward your protein goals for the day.

Caesar Salad Dressing

Makes 4 servings


Ingredients:

  • 2 cloves garlic, finely minced

  • 11⁄2 teaspoon Dijon mustard

  • 2 tablespoons tahini

  • Juice from half a lemon (approximately 11⁄2 tablespoons)

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons extra-virgin olive oil

  • 2 anchovies

  • 1 pinch sea salt

  • 1 pinch black pepper


Directions:

  1. Prepare dressing by placing all ingredients in a blender and processing until smooth (about 1 minute, or until desired consistency is reached).
